Chicken fry

Ingredients
  1. Chicken (cut into pieces) – ½ kg
  2. Onion (thinly sliced) – 2
  3. Green peas – ¼ cup
  4. Tomato sauce – 2 tbsp
  5. Green chillies – 2 no
  6. Ginger (crushed) – 1 inch long piece
  7. Garlic (crushed) – 5 pods
  8. Chilly powder – 1 tsp
  9. Turmeric powder – ¼ tsp
  10. Garam masala – 1 tsp
  11. Curry leaves – a few
  12. Oil – ¼ cup
  13. Salt – as required
Method
  1. Marinate chicken with chilly powder, turmeric powder and salt.
  2. Heat oil in a pan and fry the chicken pieces and keep aside.
  3. Fry ginger, garlic and green chillies in the fried oil in the pan.
  4. Add onions, green peas, and garam masala and fry them till onion is brown.
  5. Add the tomato sauce and fry for a few minutes.
  6. Add fried chicken pieces and mix well.
  7. Remove from heat and serve hot.

A simple chicken curry

Ingredients
  1. Chicken - 1 kg
  2. Onion (finely chopped)- 4 nos
  3. Tomato (diced) - 3 nos
  4. Ginger paste - 1 tsp
  5. Garlic paste - 1 tsp
  6. Red chilly powder – ½ tbsp
  7. Coriander powder – 1 ½ tbsp
  8. Turmeric powder - ¼ tbsp
  9. Garam masala - ½ tbsp
  10. Oil – 4 tbsp
  11. Curry leaves – a few
  12. Salt - As required
Method
  1. In a pan heat oil and fry onion and curry leaves.
  2. Stir continuously till onion starts to change its color to brown.
  3. Make a paste of all the spices by adding a little water.
  4. Add this paste to the pan and fry till oil starts to separate.
  5. Add tomatoes and fry till they are tender.
  6. Add the chicken pieces and ginger garlic paste.
  7. Cover the pan with a lid.
  8. Stir occasionally and cook in low flame till chicken is well cooked.
  9. Remove the lid and cook in medium high till gravy thickens
  10. Remove from fire and serve hot.

Coconut Chicken Curry

Ingredients
  1. Chicken pieces - 1kg
  2. Coconut milk -1½ cup
  3. Onion (thinly sliced) -1 nos
  4. Green Chillies - 5nos
  5. Ginger (thinly sliced)- 2 inch piece
  6. Garlic (crushed) - 3 pods
  7. Chilly powder - ½ tbsp
  8. Coriander powder - ½ tbsp
  9. Turmeric powder - ¼ tbsp
  10. Garam masala - ½ tbsp
  11. Curry leaves - a few
  12. Salt - as required
  13. Oil - 3 tbsp
Method
  1. Heat oil in a pan and saute onion, green chillies, ginger, garlic and curry leaves till onions are slight brown color.
  2. Make a paste of all the powders by adding a little water.
  3. Add this to the pan and saute for 2 to 3 minutes.
  4. Then add chicken pieces and salt and mix well.
  5. Cover the pan with a lid.
  6. Cook in low flame till chicken is well cooked.
  7. Pour the coconut milk and bring to boil.
  8. When it beings to thickens remove from flame.

Tandoori Chicken


Ingredients

  1. Chicken Legs - 8 nos
  2. Ginger-garlic paste - 2 tsp
  3. Chilli powder - 1 tsp
  4. Turmeric powder - ¼ tsp
  5. Cumin powder - ¼ tsp
  6. Garam masala powder -1 tsp
  7. Yogurt/ curd - 1cup
  8. Lemon - juice of one
  9. Salt - to taste
  10. Oil - 2 tbsp
Method
  1. Make gashes on chicken legs.
  2. Marinate chicken with all the ingredients except oil.
  3. Refrigerate overnight.
  4. Preheat oven to 200C/ 400F.
  5. Grease a baking tray with oil and place the chicken on it.
  6. Bake for approximately 25 minutes, then turn the pieces and bake for another 25 minutes.
  7. Squeeze lemon juice on top.
