Crispy dosa

  1. Raw rice - 1 cup
  2. Urad dal – ¾ cup
  3. Cooked rice – ¾ cup
  4. Water – 1 ½ cup
  5. Salt – as required
  1. Soak raw rice and urad dal for 2 to 3 hrs.
  2. Grind all the ingredients except salt to a fine paste.
  3. Place the mixture in a warm place for 10 to 12 hrs for fermentation.
  4. Add salt and mix.
  5. Heat a fry pan and grease with oil.
  6. Pour a ladle full of batter at the center of the pan.
  7. Starting from center spread the batter into a thin round.
  8. Cover the pan with a lid and cook till the row color changes.
  9. Open the lid and remove when crisp and golden brown.
