Pachor - Rice cooked in jaggery syrup
Ingredients- Raw rice – 1 cup
- Grated coconut – 1 cup
- Grated jaggery – 1 cup
- Water – 3 cups
- Cardamom (roasted and powdered) – 5 pods
- Ghee /butter – 2 tbsp
Method- Soak raw rice for 1 hr, drain and keep aside.
- Melt jaggery in water.
- In a pot heat the jaggery syrup.
- When it begins to boil add rice, grated coconut and ghee.
- Cover the pot with a lid.
- Stir occasionally and cook in low heat for half an hour.
- Remove from fire when rice is done.
- Add powdered cardamom and mix well.
- Transfer into a greased tray and cut into desired shapes.
